Ingredients:

          Baby Potatoes              : 500 gms
          Onion                              : 3 roughly chopped
          Tomato                           : 5 roughly chopped
          Garlic                           : 8-10 cloves chopped
          Ginger                          : 1 inch piece chopped
          Green Chilli                 : 2 chopped
          Curry Leaves               : 8-10
          Cumin                          : 1 tsp
          Clove                           : 3
          Cinnamon                    : 1 small piece
          Red Chilli Powder       : 1 tbsp
          Coriander Powder        : 1 tbsp
          Cumin Powder             : ½ tbsp
          Turmeric Powder         : ½ tsp
          Garam Masala             : 1 tbsp
          Salt                               : To taste
          Sugar                            : 1 tbsp
          Kasuri Methi                : 1 tsp
          Oil                                : ½ cup
          Ghee(Clarified Butter) : 2 tbs

Method:

1. Wash baby potatoes, add in hot water, add some salt and boil. After boiled, let baby potatoes cool at room temperature and remove skin.

2. Heat pan, add ¼ cup oil and ghee (clarified butter) .

3. Add cumin, cloves, cinnamon, curry leaves, onions, ginger, garlic, green chillies and saute well.

4. Add tomatoes, red chilli powder, coriander powder, cumin powder, turmeric powder, salt, sugar, and garam masala. Mix well and cook till tomatoes become tender and oil separates.

5. Add kasuri methi and mix well.

6. Turn off the flame. let mixture cool at room temperature.

7. Blend it in mixture jar and make gravy.

8. Again heat ¼ oil in another pan. Add boiled, peeled baby potatoes and saute till golden in colour.

9. Add above gravy into it and mix well.

10. cook for 2 minutes.

11. PUNJABI DUM ALOO is ready to serve hot.


Serving Tip:

          PUNJABI DUM ALOO gives better taste while it serves with Roti, Naan, Paratha, etc.
