Must try this unique recipe that is one of the favorite for spicy curry lover. This is one of the famous traditional Gujarati recipe, particularly Eggplant/Brinjal lovers have appreciated it a lot. Preparing this recipe is very quick and easy as like other recipe of The Yummy Lounge. Specifically the people who are bored of eating routine veggie curries, then would strongly recommend to try this one. Even though this is an easy homemade recipe, but it gives taste of restaurant style curry. This recipe includes peanut and spices which gives an awesome taste. This Bharela Ringana Bateta recipe is recommended for main-course along with chapati or bhakhri.

Ingredients:
Potatoes : 7-8 peeled and washed
Brinjals (Eggplant) : 4-5 stem removed
peanuts : ¾ cup
sev : ¼ cup (or any fried gram flour snacks)
Red chili powder: 2½ spoon
Coriander - Cumin powder : 3 spoon
Turmeric Powder : 1 tsp
Salt : To taste
Garam Masala : 1 Spoon
Sugar : 1 spoon
Garlic : 8-10 clove peeled
Lemon : 1
Oil : ¼ cup
Asafoetida (Hing) : pinch
Method:
1. First will make peanut mixer. Take mixer jar, add peanuts, sev, 1½ spoon red chili powder, 2 spoon coriander - cumin powder, ½ tsp turmeric powder, salt to taste, sugar, garam masala, garlic blend them well. Transfer into a bowl. add lemon juice and mix well. Peanut mixture is ready. keep aside.
2. give two cross half slits to all potatoes and brinjals.
3. stuff potatoes and brinjals with above peanut mixture.
4. Heat pan, add oil.
5. when oil becomes hot, add asafoetida.
6. Add stuffed Potatoes only in pan. saute for a minute
7. Add 500 ml water or up till potatoes sinks.
8. Add 1 spoon red chili powder, 1 spoon coriander - cumin powder, ¼ tsp turmeric powder, salt to taste and mix well.
9. Cover it and cook 50%. half cook. you can pressure cook also.
10. After half cook, add stuffed brinjals. Add water as well if required. Ensure potatoes and brinjals should be sinked.
11. Cook another 50%.
12. After cook, slow the flame. At this stage also, potatoes and brinjals should be sinked by water. Add gradually remaining peanut mixture and mix gently.
13. Cook for 2 minute in low flame.
14. Stuffed Brinjal Potato - Bharela Ringana Bateta is ready to serve.
Serving Tips:
Add remaining peanut mixture at the time of serving. Heat a curry again, add gradually peanut mixture, gently mix, and serve hot. It gives good taste with Chapati, puri, Bhakhri, Rotla or any Gujarati flat bread.
